Steamed Hen:
4 Hen Breasts
4 Hen Thighs
Lemon Juice, from 1 Lemon
4 stalks Spring Onion, sliced
1 Onion, roughly chopped
4 cloves Garlic, minced
3 cm Ginger, thinly sliced
3 stalks Lemon Grass, bruise to launch taste
2 teaspoons Salt
2 teaspoons Sugar
1/2 teaspoon White Pepper Powder
3 tablespoons Soy Sauce
1 teaspoon Sesame Oil
2 litre Water
Hainanese Rice:
3 cups Rice, cleaned and rinsed
2 tablespoons Vegetable Oil
1 teaspoon Sesame Oil
3 cloves Garlic, minced
1 cm Ginger, grinded
2 stalks lemon Grass, bruise to launch taste
5 Shallots
1 litre Hen Inventory
2 tablespoons Soy Sauce
2 teaspoons Salt
1/2 teaspoon White Pepper Powder
Sauce:
1 teaspoon shredded Ginger
1 teaspoon shredded garlic
1 teaspoon Sesame Oil
4 tablespoons Soy Sauce
Hen Broth:
500 ml Hen Inventory
1 stalk Spring Onion, chopped
5 Tablespoons Soy Sauce
1 teaspoon Sesame Oil
1/2 teaspoon Sugar
1/2 teaspoon White Pepper Powder
Garnish:
Cilantro
Instructions:
Steamed Hen:
1. Marinade rooster with lemon juice, put aside for half-hour.
2. Put rooster in warmth proof bowl, add spring onion, onion, garlic, ginger and lemon grass. Pour sesame oil and soy sauce. Season with garlic, sugar and white pepper powder.
3. Put together steam pan, fill water. Steam rooster with low fireplace for one hour till the rooster soft and tender, serve soy sauce.
Hainanese Rice:
1. Warmth vegetable oil in a giant pan, saute garlic and ginger till aromatic.
2. Put in rice, stir it nicely. Pour rooster inventory, sauce and oil. Add lemon grass and shallots. Season with salt and white pepper powder.
3. Cook dinner in low fireplace till all water absorbed by rice.
4. Put together steam pan, steam cooked rice for half-hour till it’s completed, serve.
Sauce:
Combine all components collectively in small bowl. Combine it nicely till all blended collectively.
Hen Broth:
Boil rooster inventory in a medium pan, add the remainder of components, stir it nicely.
Serving:
Serve Hainanese Rice with steamed rooster,sauce and rooster broth, in the event you like, add some recent cilantro.
